A journey through flavour
A blend is not a sum of ingredients — it is knowing where each one has to stop. We know how much sesame za'atar can carry before it takes over, and the point where sumac stops being balance and turns into sharpness. Twenty-two years of correcting those ratios, grain by grain.
So what leaves our floor is not a spice but a decision taken on your behalf: a ratio settled, a roast chosen, a grain left out. You open the pack and the flavour is already right — and that is the only thing that earns the name Al-Agha.
